This Bruschetta with Roasted Cherries, inspired by Kevin is Cooking and modified by me, is a fresh and vibrant take on a classic appetizer, combining the richness of creamy ricotta with the bright, juicy sweetness of roasted cherries. Sourdough baguette slices are brushed with olive oil and lightly charred under the broiler to bring out their crisp texture and deep flavor. Meanwhile, the cherries are halved, lightly salted, and broiled just until they begin to burst and release their juices, creating a luscious and slightly tangy topping.
